Everyday Usage
Ideal Cooking Styles: Excellent for slow-cooking, simmering, and dum cooking. It is perfect for biryanis, pulao, stews, dals, and rich gravies.

Safe for All Foods: Thanks to the internal Kalai (tin) lining, you can safely cook acidic dishes containing tomatoes, tamarind, yogurt, or lime.

Heat Management: Always cook on low to medium heat. Pure brass conducts heat exceptionally well, so high flames are rarely necessary and can overheat the metal.
Never Heat Empty: Do not place the empty handi on a lit stovetop. Because tin has a relatively low melting point, heating it dry will cause the inner Kalai lining to melt, blister, or peel off immediately.

Always add oil, water, or food first.

Utensil Choice: Use wooden, silicone, or smooth plastic spatulas. Avoid sharp metal ladles or spoons, as they will scratch and prematurely wear down the soft tin coating.

Never Heat Empty: Always add oil, water, or food before turning on the stove. Dry heating will melt the internal tin (kalai) lining.

Keep Heat Low: Cook only on low-to-medium heat. Brass conducts heat exceptionally well, making high flames unnecessary.

Use Gentle Utensils: Stick to wooden or silicone spatulas. Sharp metal spoons will scratch and wear off the soft tin coating.

Cleaning & Longevity
No Harsh Scrubs: Wash by hand using a soft sponge and mild soap. Never use steel wool or wire mesh, as it instantly strips the inner lining.

Dry Immediately: Wipe the handi completely dry with a soft cloth after washing to prevent water stains and oxidation.

Maintaining the Glow: The golden exterior will naturally darken over time. Clean the outside only with Pitambari powder, tamarind paste, or lemon juice and salt to restore its shine.

Periodic Re-Tinning: When the inner silver lining wears off and the golden brass shows through, get it re-tinned (kalai done) by a local metal craftsman to keep it 100% food-safe.
