Description

An authentic, heavy-duty Pure Brass Patili (or Degchi) is a traditional Indian cooking vessel prized for its exceptional heat distribution and superior moisture retention. Hand-hammered from pure brass and lined with a protective layer of pure tin (Kalai), its unique tapered-neck design traps steam to naturally self-baste food. It is the ultimate heirloom vessel for slow-cooking aromatic biryanis, rich curries, dals, and milk-based desserts without scorching.

Usage & Culinary Benefits

Culinary Uses

  • Biryanis & Pulaos: Ideal for Dum cooking (slow steam-cooking) rice, ensuring perfectly fluffy grains that don't stick to the bottom.
  • Curries & Kormas: Perfect for slow-simmering mutton, chicken, or vegetable curries where the flavors need time to deeply meld.
  • Dal & Lentils: Excellent for simmering creamy, slow-cooked lentils like Dal Makhani or Chole for hours without burning.
  • Milk & Desserts: The lack of hot spots makes it the gold standard for reducing milk to make KheerRabri, or Halwa without the dairy catching and smoking.

Culinary Benefits

  • Even Heat Distribution: Brass eliminates hot spots, preventing thick gravies and rice from scorching at the bottom.
  • Superior Flavor Fusion: The heavy metal structure holds a steady, gentle heat that coaxes rich flavors out of spices and bone-in meats over long cooking periods.
  • Self-Basting Design: The traditional tapered neck traps steam, causing it to condense and drip back into the food, keeping meats incredibly tender.
  • 100% Acid-Safe: The pure tin lining (Kalai) ensures you can safely cook tomatoes, yogurt, and tamarind without any metallic reaction or alteration of flavor.

Care & Longevity Instructions

Care

Pre-Fill Before Flame: Never let the empty pot sit on a lit burner. Tin melts at a relatively low temperature (232∘C / 450∘F). Always have liquid, fat, or ingredients inside the pot before applying heat.

Strictly No Metal Spoons: Deep pots encourage vigorous stirring. Only use smooth wooden or silicone ladles. Scraping the bottom with a metal spoon or a sharp ladle edge will physically shave off the protective tin layer.

Cool Before Washing: Avoid thermal shock. Letting a hot brass pot plunge into cold sink water can warp the metal structure or loosen the tin bond. Let it cool naturally on the counter first.

Store Completely Dry: After hand-washing with a soft sponge (never steel wool), wipe the vessel completely dry with a soft cloth. Storing it wet can lead to premature dulling or oxidation of both the tin and the outer brass.

Longevity Instructions:

  • Never Heat Dry: Always add water, oil, ghee, or food before placing the vessel on the flame. Dry heating melts the tin lining instantly.
  • Keep Heat Low-to-Medium: Brass absorbs and retains heat exceptionally well. High heat is unnecessary and can damage the coating.
  • Use Soft Utensils: Stir exclusively with wooden or silicone spoons. Metal ladles will scratch and scrape off the soft tin layer.
  • Gentle Cleaning Only: Wash by hand using a soft sponge and mild dish soap. Never use steel wool, abrasive scouring pads, or the dishwasher.

Frequently Asked Questions

Q: Why does the silver lining look dull or dark after a few uses?

A: This is completely normal oxidation. Tin naturally loses its shiny mirror finish and turns a dull gray or darkens over time when exposed to air and heat. It is perfectly safe to cook in.

Q: How do I know it is time to re-tin (do Kalai)?

A: When the silver coating wears away and the golden-yellow brass metal starts peeking through on the cooking surface. Stop cooking acidic foods in it once the brass is visible and get it re-coated.

Q: Can I use this pan for deep frying or high-heat stir-frying?

A: No. Tin has a low melting point (232∘C / 450∘F). High-heat stir-frying or dry-searing will melt or blister the lining. Stick to low-to-medium heat cooking, stewing, and gentle sautéing.

Q: Is it dishwasher safe?

A: Absolutely not. Dishwasher detergents are highly abrasive and will strip the soft tin lining right off the brass. Always wash gently by hand using a soft sponge and mild soap.

Q: What happens if I accidentally scratch the tin with a metal spoon?

A: Mild surface scratches are fine as long as the brass underneath isn't exposed. If the scratch is deep enough that you see the yellow brass glinting through, it needs to be spot-repaired or re-tinned.
