Description

Bring timeless tradition, exceptional heat distribution, and health benefits to your kitchen with the Pure Brass Sipri. Expertly handcrafted by skilled artisans, this heavy-bottomed cooking vessel features a hand-hammered (Mathar) finish that strengthens the brass and improves thermal efficiency.

To ensure completely safe cooking, the interior is lined with a traditional Kalai—a food-safe tin coating that prevents brass from reacting with acidic or sour ingredients. Complete with sturdy brass handles for easy lifting and a tight-fitting brass lid to lock in aroma and moisture, this Sipri is ideal for slow-cooked dals, curries, biryanis, and rice dishes.

Key Highlights

  • Material: 100% Pure Brass with internal Pure Tin (Kalai) lining.

  • Finish: Hand-hammered texture on the exterior for classic aesthetics and structural strength.

  • Design: Deep, rounded belly with heavy brass side handles and matching cover lid.

  • Heat Efficiency: Distributes heat evenly and retains temperature longer than modern cookware, saving energy and intensifying flavors.

Uses & Culinary Benefits

Cooking Uses

  • Slow-Cooked Curries & Dals: Excellent for slow simmering Mutton/Chicken CurryDal Makhani, and Sambardue to superior, even heat retention.
  • Biryani & Rice Dishes: Ideal for Dum BiryaniPulao, and Kheer, keeping grains intact and heating uniformly without scorching at the bottom.
  • Soups, Stews & Gravies: Perfect for simmering traditional soups (RasamShorba) and thick gravy dishes.
  • Boiling Milk: Safely boils and thickens milk for desserts like Rabri and Basundi without burning or sticking easily.

Note: Safe for all acidic or sour ingredients (tomatoes, tamarind, yogurt) only while the inner tin (kalai) lining is intact.

Culinary Benefits:

Superior Heat Retention & Distribution: Brass conducts heat quickly and evenly across the heavy bottom and walls, eliminating hot spots. This prevents food from scorching or burning at the base.

Enhanced Flavor & Aroma Retention: The heavy brass lid seals in moisture and steam, making it ideal for dum (slow-steam) cooking. Essential oils from spices remain trapped inside, yielding richer, more fragrant curries and biryanis.

Preserves Nutrients: Brass cooks food evenly at steady temperatures rather than harsh, rapid spikes, helping retain more natural vitamins, minerals, and moisture in meats, pulses, and vegetables.

Non-Reactive & Safe Cooking: The Kalai (tin) lining creates a smooth, non-stick, non-reactive layer. This lets you simmer acidic ingredients like tomatoes, curd, or tamarind without metallic leaching or off-flavors.

Energy Efficient: Brass retains thermal energy long after the flame is turned down or switched off, allowing food to finish cooking gently on residual heat while staying warm at the table.

Care & Longevity Instructions

Care & Longevity Instructions

  • Soft Wash Only: Use mild soap with a soft sponge on the inside. Never use steel wool or abrasive scrubs, as they scrape off the delicate tin (kalai) coating.
  • No Dry Heating: Always add oil or water before placing on the flame. Tin melts at low temperatures (~232°C/450°F) and will peel if heated empty.
  • Shine the Outside: Rub the outer brass with Pitambari, tamarind paste, or lemon + salt. Keep acidic cleaners off the inner lining.
  • Dry Immediately: Wipe completely dry after washing to prevent water spots, oxidation, and green tarnish spots.
  • No Food Storage: Transfer cooked food out of the vessel after cooking—do not store curries or acidic foods inside overnight.
  • Re-Kalai When Needed: Re-coat the interior with fresh tin every 6 to 18 months once the golden brass starts showing through the silver inner lining.

Frequently Asked Questions

Frequently Asked Questions (FAQs)

1. Is it safe to cook acidic foods (tomatoes, lemon, tamarind) in this Sipri?

Yes, as long as the Kalai (tin) coating is intact. Brass reacts naturally with acids to produce toxins, but the inner tin lining acts as a non-reactive barrier, making it safe for all ingredients including curries with tomatoes, yogurt, or lemon juice.

2. Can I use this Sipri on an induction cooktop?

No. Brass is non-magnetic, so it works on gas stoves, open flame, and traditional coal hearths, but not on induction stoves unless equipped with an induction adapter plate.

3. How often does the Kalai (tin coating) need to be redone?

Depending on usage frequency and cleaning methods, the coating usually lasts 6 months to 2 years. Once you notice the silvery tin layer wearing down and exposing the yellow brass underneath, it is time to re-kalai.

4. Why is the exterior hand-hammered?

The dimpled texture is not just decorative—hammering work-hardens the brass alloy, making the vessel more resistant to denting and helping heat spread evenly across the surface.
